This wine is pale straw in colour with an intense nose displaying complex, bready, toasty cashews. The palate is fresh and bright but with depth and richness. Complex range of flavours from secondary fermentation and 2 years lees aging fill the palate with nougat character and ripe stone fruit. The finish is long with a lingering rich and flavoursome aftertaste. From a warm vintage this wine shows robust flavours and richness a highly attractive drink.
We hand harvested our chardonnay in January. The grapes were chilled overnight then tipped and squashed into the press the following morning. Whole bunch pressing – the fruit is not crushed, just squeezed – this produces the finest juice, which is what we seek for our Blanc de Blanc.
“Possessed of an excellent palate, and with an impeccable wine making background, the quality of John’s wines is guaranteed”.
James Halliday, Australian Wine Companion
