Description
This wine is pale straw in colour with an intense nose displaying complex, bready, toasty cashews. These complex lees aged characters dominate. The palate is fresh and bright but with depth and richness. Complex range of flavours from secondary fermentation and lees aging fill the palate with nutty, nougat and cashew flavours. The finish is long with a lingering rich and flavoursome aftertaste. From a warm vintage this wine shows robust flavours and richness. With over 2 years on yeast lees the wine is showing typical bottle ferment characters which bring complexity makig it a highly attractive drink.
We hand harvested our chardonnay in January. The grapes were chilled overnight then tipped and squashed into the press the following morning. Whole bunch pressing – the fruit is not crushed, just squeezed – this produces the finest juice, which is what we seek for our Blanc de Blanc.
